My version is stuffed with scrambled Vegan Egg, vegan mozzarella cheese, air-fried potatoes, but be creative. Add fresh herbs, some hot sauce, vegan faux meat, beans, jalapenos, etc. This is a great meal to recycle your leftovers in disguise, so no one would recognize them.
All I did was take a flour tortilla and stuff it with the ingredients I mention above. Place the ingredients in the middle third of the tortilla, ensuring that you leave about 1-1/2” edge on the side. Fold the bottom third over stuffing in the middle third, shoring it towards you to tighten the wrap. Fold both sides in, then continue wrapping the tortilla away from you. You should end up with a securely wrapped stuffed tortilla.
Preheat the air fryer to 390 degrees Fahrenheit for a minute or so. Lightly spritz each wrap, and place in the air fryer in a single layer. Do not crowd the wraps as the tortillas will not fry if they are mushed together. Fry for 6 minutes, or until the tortilla is lightly toasted and the insides are warm. Cut in half on the diagonal.
Serve with your favorite salsa (or chutney if you are going with Indian filling, or Italian gravy if you are going with an Italian filling, or Thai chili sauce if you are going with Thai–have fun with it).
