Quick, Easy, Sumptuous!
Perfect For A Healthy and Nutritious Weekday Meal After a Busy Day at the Office!
With the availability of two pretty darn spectacular plant-based ground meat alternatives (Beyond Meat Ground Meat and LightLife Plant-Based Ground Meat), I have to admit to having become completely smitten with these two products. Talk about quick, go-to meals that I can whip up in no time at all! I’m in vegan heaven on earth!
One of my favorites is to cut up onions and garlic. Start by sautéing the onions until they become translucent. Then add chopped garlic (and some chopped jalapenos, if you feel so inclined, which I typically do). Just when the onions begin to caramelize, add the plant-based ground meat. As it begins to brown, break it up into smaller, bite-sized chunks.
Have at the ready a jar of your favorite pre-made tomato sauce and a large bag of a variety of mixed veggies. First add the veggies to start defrosting them, then add the tomato sauce to your vegan “Burger” Helper. Allow it to simmer for 10-15 minutes, then serve.
Serving suggestion…
While you are preparing your vegan “Burger” Helper, cook some rice, quinoa, or pasta that will become the base for your dinner. Top it with your version of Burger Helper, and you have a complete meal, ready in under ˝ hour with minimal ingredients that you have in your pantry, fridge, and/or freezer.
You can change this up to be something completely different by swapping out the tomato sauce for a pre-made Thai sauce, peanut sauce or coconut milk with a spice blend of your choosing. Or substitute the vegan ground beef with vegan chicken strips/shreds. You could even try Butler Soy Curls which you have lightly re-hydrated in place of the ground ‘meat’.
Have fun with this recipe, I’m sure it will become one of your favorites! It’s perfect for when you’re pressed for time but still would like to have a hearty, delicious, and nutritious meal. And, it’s on the table in less time than it would take for you to call and have food delivered!
